I have been craving salads lately, and loving this new recipe: "SUPERFOOD: KALE + QUINOA SALAD" It is crunchy, tasty, so flavorful, loaded with fresh wholesome ingredients. These ingredients will keep you fueled and energized. The tangy and creamy basil lemon dressing is so tasty to elevate the flavors of this salad.


This is my version of Kale Mediterranean Salad, a great combination of fresh ingredients and added my fave SUPERFOOD "QUINOA" to fortify the salad and elevate the nutritious content.


Here are the ingredients:

  • KALE
  • QUINOA
  • CUCUMBERS
  • TOMATOES
  • SHALLOTS
  • CHICKPEAS
  • OLIVES
  • FETA CHEESE (OPTIONAL FOR VEGAN OPTION )

This beautiful and colorful salad is so satisfying. Perfect for making meal planning as it keeps well in the fridge for 3 days. The perfect picnic item or the new favorite at the next pot luck.

I love chickpeas as my vegan protein source to this salad.

Ingredients
SUPERFOOD KALE + QUINOA SALAD
  • 1 bunch of kale
  • 1/2 cup of cooked quinoa
  • 1/2 cup of feta cheese (cubed)
  • 1 can of chickpeas
  • 1 cop of diced tomatoes
  • 1 cup of diced cucumbers
  • 1 small shallots ( finely chopped)
  • 1/2 cup of kalamata olives
  • 1/4 cup fresh herbs mix (dill and mint)
Lemon Basil Dressing
  • 1 cup of basil
  • 1/2 cup of extra virgin olive oil
  • 1 small garlic clove
  • 1 lemon (juice)
  • Salt + Pepper to taste
Instructions

Prep all the ingredients. First remove the stems from the kale leave and chop. Dice the tomatoes, onions, cucumbers, olives and feta. Chop the fresh herbs.
Then, rinse the can of chick peas an set aside.
In a large bowl, add the chopped kale as the base, add a drizzle of extra virgin olive oil and massage the kale. This will help soften the kale but will still keep it crunchy. Then add the quinoa in the center, and as a roulette, add the rest of the ingredients on the sides: tomatoes, cucumbers, shallots, feta, chickpeas, olives and top off with fresh herbs.
Now for the dressing, simply add all the ingredients to a blender, mix for a few minutes until smooth or desired consistency.
To serve, toss the salad so all ingredients are combined. You can have the dressing on the side or add to the salad bowl as desired.

Tips
  • An extra recommended step to elevate the flavor of the chickpeas is to lightly toast in the air fryer or in a pan. Simply open the can of chickpeas, drain and pad dry. Then drizzle a little bit of avocado oil, and coat it with 1/4 tsp of smoked paprika, salt and pepper. then cook in a hot cast iron pan for 5 minutes or in the air fryer.
