BLT’s are one of my true favorite “comfort food” dishes, but I sometimes feel guilty binging on the carbs. This quick and easy salad tastes just as delicious, but without the guilt! Enjoy my version of a BLT!
The perfect quick easy dinner, for hot summer days! I promise you won’t even notice or miss the bread!
In a medium sized bowl, mix chopped tomatoes, mayo, salt and pepper together for this easy dressing alternative.
Crispy bacon is the star of this salad and the creamy avacado is the perfect finishing touch! Don't miss this one, those summer days are coming to an end!

Ingredients
- 4 Roma Tomatoes
- 1/2 c Lite Mayo
- 6 c Romaine lettuce
- Package of Bacon
- Salt/Pepper
- 1 medium Avacado, sliced
Instructions
- Cook the package of bacon in a frying pan over medium heat, about 10 minutes, then set aside on a paper towel.
- While bacon is cooking, chop up the tomatoes. Add to a bowl with 1/2c of the Mayo and a pinch of salt and pepper. Stir to combine and let it sit for 10 minutes to allow the juices to soak in.
- Assemble lettuce on plates. Top with a heaping spoonful of tomato dressing, bacon pieces, and avacado slices.
