BLT Salad

Ripe red tomatoes, white sourdough bread made into croutons, and bleu cheese top a bed of crisp romaine lettuce for this BLT salad. The perfect summer salad to celebrate with this July 4th!


The base for this salad is Josie’s Romaine lettuce. Their romaine is the best. I don’t know about you, but sometimes I buy romaine and it turns out to be very bitter. Not with Josie’s! I don’t know what it is, but the texture is always crisp and the flavor is light and fresh without any bitterness!


I love enjoying salads in the summer because not only are they a lighter option, they also highlight delicious produce that is often in its prime this season. Tomatoes for example are juicy and ripe as can be this time of year!


To capitalize on how quick this salad can be made, start by preheating your oven and chopping up the sourdough to make croutons.

Then start your bacon.


While those two are cooking, began chopping and plating the remaining ingredients. By having a few things going at a time, you truly can get this salad done in ten minutes.


Some fun add-ins to consider

  • Avocado
  • Grilled chicken
  • Sub feta for bleu (some people dislike bleu cheese, and feta would be a good substitute)
  • Hard boiled eggs
Serve this summer salad with your favorite dressing– I love it with ranch!

Ingredients

  • 6 cups Josie's Romaine lettuce, chopped
  • 1 small red onion, thinly sliced
  • 5 slices of cooked bacon
  • 1/3 cup bleu cheese crumbles
  • 2-3 slices sourdough bread
  • 2 medium tomatoes, sliced
Instructions

Preheat oven to 400 degrees. Cube sourdough bread into bite-sized pieces and place on baking sheet. Place in oven and allow to crisp up, about ten minutes.
While the bread is cooking, prepare your bacon according to the packaging instructions.
Chop romaine and place down in serving dish.
Top with tomatoes, bleu cheese, red onion, sourdough croutons, and crumbled bacon.
Serve with your favorite salad dressing.
