Did you know that traditional green salad doesn’t actually have any lettuce in it at all? But don’t worry you won’t miss it too much. This salad is so simple to put together and is packed full of fresh summer flavors. I love making Greek salads as a way to use up all of those extra tomatoes and cucumbers from the garden. It’s delicious on its own as a lunch or paired as a side for dinner. My favorite part of a Greek salad is enjoying it with a good quality bread to soak up all of the extra dressing at the end. Enjoy!

For this super simple salad all you will need is one cucumber, two ripe tomatoes, red onion, Kalamata olives, feta cheese, oregano vinegar and a good quality olive oil.

Chop up all of your veggies, and place in a bowl or dish. Top with a generous piece of feta cheese and drizzle with olive oil. Season with oregano and salt and pepper to taste. The salad is delicious as is but if you prefer a bit more tang drizzle on some vinegar of your choice ( I prefer to use apple cider).

Before serving crumble up the feta and toss everything together.

Ingredients

  • 1 cucumber
  • 2 ripe tomatoes
  • 1/4 red onion
  • Kalamata Olives
  • 1/4 cup feta cheese
  • Good quality olive oil
  • Vinegar
  • 1/2 tsp Oregano
  • Salt and pepper to taste
Instructions

Wash and roughly chop the veggies
Place everything in a bowl, crumble the Feta cheese and drizzle with olive oil.
Season with salt and pepper and vinegar to taste.
Toss until everything is evenly coated, and enjoy!
Tips
  • I didn’t include measurements for the dressing as it is personal taste. This is just a guideline as to how to prepare a basic traditional Greek salad.
