I like to make this quick and easy slaw when I am in need of a fresh side or lunch for the week, but don’t have much time or energy for anything fancy.


The best thing about it is that all ingredients are super cheap, and healthy, but it still manages the tick the boxes of some comfort food. The chickpeas add a protein kick to make it all a little more of a meal that fills you up. I still like to have this on the side of something like some grilled meats or tofu, or a quiche.


the best to prep this meal is making a big batch and letting it sit in the fridge for a couple days, to marinate.

Ingredients

  • 2 CUP red cabbage, shredded
  • 2 CUP carrots, shredded
  • 1x 15oz tin of chickpeas
  • Handful of parsley, chopped
  • 1 TBSP mayonnaise
  • 1 TBSP yoghurt
  • 1 TSP lemon juice
  • salt and pepper, to season
Instructions

Find the biggest mixing bowl you have and toss together the carrots, red cabbage and parlsey.
Drain and rinse the chickpeas before adding to the same bowl.
Add the yoghurt, mayonnaise and lemon juice and mix together well until well coated. Season with the salt and pepper to your tasting.
Tips
  • You can either shred the cabbage with the blade chopper blade of a food processor or by hand with a sharp knife.
