Tasty Turkey Meatballs

As we don't eat red meat in our family, I am constantly looking for alternatives, whether that is vegetables, cheese, fish or poultry.


These turkey meatballs are really soft and tasty eaten just on their own, served with a side of salad and potatoes, or you could try and cook them in tomato sauce and eat them with a side of polenta. Absolutely delicious mid-week meal that requires very little prep time.


You can also make them the night before and add them to your or the kids' lunchbox for the next day. Nothing like cooking once and eating twice in my books.

Ingredients

  • 400g ground turkey
  • 100g ricotta
  • 1/2 glass of milk
  • 1 egg
  • 1 tbsp ground ginger
  • 1 tbsp sweet paprika
  • 1 garlic clove
  • Breadcrumbs
Instructions

Mix everything together in a bowl using a fork except for the breadcrumbs and the garlic.
Then add the breadcrumbs one spoonful at the time, mixing them in, until you reach a consistency that is not too sticky and you can work into balls. Season.
Take a spoonful of mixture and roll it into a ball until all the mixture has been used up.
Add some oil to a pan and the garlic cut into two, and once hot put in all the balls.
Let them cook for about 30 minutes, turning them from time to time.
Serve either hot or cold!
