Chili, honey and lime is such a good combination of flavours. I've used it here to create a marinade for some chicken kebabs, the the kebabs are great cooked on the grill or the bbq. It's sweet, spicy, tangy and all round delicious.


You know I love a kebab, usually I go for middle Eastern flavours but it was really nice to try something different, and I will definitely be repeating this bad boy!


I love these kebabs all wrapped up in a flat bread, with a crunchy, crisp salad, some Greek yoghurt or labneh and more chili if required.

Ingredients
For the marinade
  • 6 Chicken thighs
  • 2 tbsp Chilli powder
  • 1 tbsp Paprika
  • 2 tbsp Honey
  • 3 Cloves garlic, crushed
  • Juice and zest of 1 lime
  • Drizzle olive oil
  • Salt and pepper
To assemble
  • Crunchy salad
  • Yoghurt or labneh
  • Pickle chillis
  • Flatbreads
Instructions

1. Chop the chicken thighs into cubes around 1 to 1.5 inches in size
2. Mix together the marinade ingredients and add the chicken. Mix it all up and marinate for anywhere between 30 minutes and 24 hours
3. Thread the chicken onto skewers.
4. Fire up the barbecue and wait for the coals to go white. Alternatively you can set the grill to a medium heat if you are cooking indoors
5. Cook the chicken for a few minutes in each side, turning regularly until cooked through. Ideally it's best to let it crisp up a bit on the inside, so don't panic if it looks a bit burnt.
6. Take the flat bread and spread with the yoghurt, add the salad, chillis and a skewer of chicken. Enjoy!
