Spring has *not* quite sprung where I live which means soup season gets to stay for just a little longer! (I mean the snow also stays a bit longer too but let’s try to stay positive, shall we?)


I’ve been loving my take on this easy white chicken chili. It is SO easy and packs so seriously delicious flavour! Tender chicken, corn and onions come together with so many delicious spices, cilantro and lime juice. Check down below for some seriously delicious topping options that kick this heart soup up a notch!


This soup makes a lot so it is perfect for leftovers all week long. Hope you enjoy this one!

Ingredients

  • 1 cup corn (fresh or frozen), rinsed if canned
  • 1 - 19 fl oz. can white kidney beans, drained and rinsed
  • 1/2 cup white onion, finely chopped
  • 2 large boneless, skinless chicken breasts
  • 1 cup salsa verde (sometimes called green Mexican sauce)
  • 4 cups chicken broth
  • 2 tsp each; salt, cumin, garlic powder, onion powder
  • 1 tsp each; smoked paprika, black pepper
  • Juice and zest of 2 limes
  • 1/2 cup cilantro, finely chopped
  • Optional toppings: Pickled jalapenos, shredded cheese, sour cream/plain Greek yogurt, taco strips or taco chips, extra cilantro, lime wedges
Instructions

In your crockpot, add in rinsed corn, beans and onion. Mix together.
Next add in the chicken breasts.
Pour in broth and salsa verde. Stir to combine together.
Next add in salt, cumin, garlic powder, onion powder, smoked paprika and pepper. Stir to combine together.
Cover and cook on LOW for 8 hours.
Once cooked, remove chicken breasts and use 2 forks to shred the meat. Place back into the crock pot along with the cilantro and lime juice. Stir together.
To serve, place soup in your desired bowl. Top with any of the above suggested toppings or enjoy plain - either way is delicious! Serve hot and enjoy!
