ADOBO Grilled CHICKEN Thighs
Hello Foodie friends,
Let's Dishplay it together and ELEVATE home cooked meals. Here is one of my family best kept secret: " Alita's alino sauce" aka ADOBO. marinade The blend of spices and onions is my go to marinade for chicken, steak or fish, also good as base to season lentils or beans.
ADOBO Ingredients:
- garlic cloves
- Onions
- Oregano
- Cumin
- Salt
- Pepper
- Tomato paste
- Smoked paprika
- Water
Blend all the ingredients in a food processor or blender and reserve in the fridge for up to 5-7 days.
This Latin grilled chicken is served with rice and beans, side of plantains and if you like it spicy add some homemade hot sauce.
Grilled to perfection and topped off with fresh cilantro.
Here is the "Alita's ALINO". - latin adobo sauce.
Marinade the chicken with a couple of tbsp of adobo and drizzles of achiote olive oil for added flavor and color.

ADOBO Grilled CHICKEN Thighs

Ingredients
- Alita's Alino:
- 2 garlic cloves
- 1/2 white Onion
- 1 Tsp of Oregano
- 1 1/2 tsp of Cumin
- 1 tsp of Salt
- 1/2 tsp of Pepper
- 1 Tsp of Tomato paste
- 1 Tsp of Smoked paprika
- 1 Tbsp of Water
- For the chicken:
- 1 lb of boneless skinless chicken thighs
- 1 Tbsp of olive oil or achiote oil
Instructions
- In a blender or food processor add all the ingredients for the ALINO (adobo) and blend until smooth. Add 1 tbsp of water or a little more if needed.
- Set aside
- In a bowl add the chicken thighs, add the olive oil and the adobo( about 2 Tbsp of the adobo) let is marinade for at least 30 minutes - 1 hour.
- In a hot grill pan cook the chicken about about 6-8 minutes each side or until cooked through 160 degrees.
- Garnish with fresh cilantro and serve with rice and beans or your favorite salad.
