Delicious Grilled Rosemary Garlic Lemon Chicken Thigh Recipe

I love to grill easy recipes, and this one is one of my favorites. Lemon gives the chicken a freshness, and the rosemary is so fragrant. When I was growing up, my mother was a big fan of these easy marinated dishes because they were so flavorful and easy to make in less than a half hour.

These are the ingredients. I used fresh rosemary and minced it. Using a Pyrex bowl with a lid works nicely to marinate meat.

Add all the ingredients into a bowl and marinate for 1-2 hours. The longer, the better when it comes to marinating. You can make it in the morning and store it in the refrigerator until you are ready to make it at night.

When ready to cook, place them on the grill for 30 minutes or until the chicken thighs reach 170 degrees. Ensure the grill is hot and cleaned before placing the meat on it.

And this is what it looked like after I finished the dish. Let it cool for a few minutes before enjoying it. This dish makes a wonderful next-day leftover lunch.

Ingredients

  • 3 Tbspoons fresh rosemary chopped
  • 4 cloves of garlic minced
  • 3 Tablespoons of lemon juice
  • 4 Tablespoons of Olive Oil
  • 1 ½ lb chicken thighs (boneless, skinless)
  • 1 teaspoon smoked paprika
Instructions

Chop fresh rosemary and set it aside.
Mince the garlic and set it aside.
Measure out the rest of the ingredients.
Add all the ingredients into a bowl and marinate for 1-2 hours.
Add the chicken thighs to a hot, cleaned grill.
Cook on the grill for 30 minutes, turning every 15 minutes.
Let cool for a few minutes, and slice and serve with a salad.
Tips
  • This recipe can also be a freezer meal. All you need to do is toss all the items above in a freezer baggie and place them in the freezer. And when you take it out to defrost, it will continue to marinate.
