Summer Chicken Zucchini Stir-Fry

Ingredients
- 2lb chicken tenderloins, cut into 1-2 in pieces
- 2 medium zucchini’s, diced
- 1 small yellow onion, diced
- 1 bag of fresh spinach (about 12oz)
- )
- 1/2 cup fresh basil leaves, chopped
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- 1/4 cup balsamic vinegar
- 1 tbsp. olive oil
- 1 tbsp. minced garlic
- 2 tsp. oregano
- salt and pepper to taste
- feta cheese to serve
Instructions
- 1. Heat olive oil in large skillet over medium heat.
- 2. Add onion and garlic and sauté till tender.
- 3. Add zucchini and sauté till tender.
- 4. Add chicken and cook till browned on all sides, about 5-8 minutes.
- 5. Season with salt, pepper and oregano.
- 6. Reduce heat to medium low and add spinach, stirring until wilted, about 2 minutes.
- 7. add lemon zest, lemon juice and balsamic vinegar, stir until combined.
- 8. Turn off heat and add chopped basil.
- 9. Serve topped with a sprinkle of feta cheese
