Ingredients

  • 2lb chicken tenderloins, cut into 1-2 in pieces
  • 2 medium zucchini’s, diced
  • 1 small yellow onion, diced
  • 1 bag of fresh spinach (about 12oz)
  • )
  • 1/2 cup fresh basil leaves, chopped
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
  • 1/4 cup balsamic vinegar
  • 1 tbsp. olive oil
  • 1 tbsp. minced garlic
  • 2 tsp. oregano
  • salt and pepper to taste
  • feta cheese to serve
Instructions

1. Heat olive oil in large skillet over medium heat.
2. Add onion and garlic and sauté till tender.
3. Add zucchini and sauté till tender.
4. Add chicken and cook till browned on all sides, about 5-8 minutes.
5. Season with salt, pepper and oregano.
6. Reduce heat to medium low and add spinach, stirring until wilted, about 2 minutes.
7. add lemon zest, lemon juice and balsamic vinegar, stir until combined.
8. Turn off heat and add chopped basil.
9. Serve topped with a sprinkle of feta cheese
