Quick Stir Fry Dinner

I love quick and easy dinners. Most of the time I am busy in the kitchen in the hotel I work in, so I don’t get much time at home to prepare dinner. When I do get the evening off and have time to cook I enjoy coming up with different easy to make recipes. I love fresh and simple vegetable dishes. This dish is a simple stir fry with some fresh garden vegetables and chicken. I served the dish with classic white rice, but you can even enjoy the dish without the rice if you want to
go for a more healthy alternative. Here I used zucchini, white onion, and cabbage as my vegetables for the sauté. I bought at the butcher sliced chicken, and really within 15 minutes you have a fresh and yummy dinner. I sauté the vegetables until brown and tender, then I add in my chicken and seasonings, and it’s ready to go.
I usually like to sauté in a more neutral oil like canola oil or grape seed oil but in this recipe I use olive oil because it gives a nice crisp and caramel taste to the vegetables.
Of course you can use brown rice instead of brown rice. But I decided in this recipe to skip the soy sauce and other store bought sauces and chose to keep the recipe on the fresh and healthy side. Hope you enjoy!

For the stir fry
- 3 zucchini’s sliced
- 1 white onion, sliced julienne
- 1/4 white cabbage sliced
- 500 grams sliced chicken
- 1/2 teaspoon sweet paprika
- 1 teaspoon cumin
- salt and pepper to taste
- olive oil for pan frying
Instructions
- Heat a large sauté pan with about 3 tablespoons olive oil
- Add in the sliced white onion and cook for about 2 minutes
- Then add in the zucchini and cabbage and stir for about 5 minutes until the vegetables begin to become tender
- Add in the chicken and continues mixing until all is fully cooked
- season with the spices and you will see how naturally the vegetables and chicken cook together and create an amazing dish
- I specially served the chicken story fry with rice, you can even choose quinoa or even barley would be a great choice
