Ingredients

  • 4  boneless, skinless chicken breasts
  • 2 cups slice portabello mushrooms
  • 1 cup flour
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1/2 cup any high heat oil ex. sunflower, peanut oil, safflower oil
  • 1 cup shredded cheddar cheese
  • 4 slices Monterey Jack cheese
  • 1/4 cup sour cream
  • 2 tbl olive oil
  • 2 cloves garlic minced
  • 1/2 tsp white pepper
  • 1 cup water
  • 1/4 cup lemon juice
  • Fresh parsley for garnish
Instructions

Preheat your oven to 375°F (190°C) and grease a baking tray or casserole dish.
In a large skillet over medium-high heat, add the high heat oil and let it heat up.
In a shallow bowl, combine the flour, garlic powder, salt, and pepper. Mix well.
Dip each chicken breast into the flour mixture, coating it evenly on both sides.
Carefully place the chicken breasts in the hot skillet. Then cook for about 2-3 minutes on each side or until golden brown. Remove from the skillet and transfer to the prepared baking tray.
The Delicious Sauce
In the same skillet, add the olive oil. Then sauté the sliced portobello mushrooms until they become tender and golden brown. This should take about 4-5 minutes. Remove the mushrooms from the skillet and set aside.
In a saucepan over low heat, combine the sour cream, minced garlic, white pepper, water, and lemon juice. Stir well and let it simmer for a few minutes until the sauce thickens slightly
Pour the creamy portobello mushroom sauce over the chicken breasts on the baking tray.
Sprinkle the shredded cheddar cheese over the chicken breasts. Next, place a slice of Monterey Jack cheese on top of each chicken breast.
Bake in the preheated oven for about 20-25 minutes or until the cheese melts and turns golden brown.
While the chicken is baking, prepare a bed of cold greens. You can use green such as crisp hearts of romaine, on each serving plate.
Once the chicken is cooked, remove it from the oven and garnish with fresh parsley. Serve each chicken breast on top of the bed of greens
You can pair this dish with your choice of side dishes. Side dishes such as steak fries, a baked potato, or a fresh salad are great choices.
Enjoy the rich flavors of the Texas Roadhouse Portobello Mushroom Chicken in the comfort of your own home!

When and where do you add the mushrooms? Your instructions are not clear.

    • Lynda Lynda on Aug 08, 2023

She deals with the mushrooms in the sauce section of the recipe.

Step 1 says to cook mushrooms and set aside. Step 2 says to make sauce and cook until thickened. Step 3 says to pour sauce over the chicken. I'm only 12 , this very confusing when do you add the mushrooms? Grandma isn't here to tell me. I want to make dinner for her Wednesday when she gets home.

I was confused by that myself. After the sauce has thickened I would add the mushrooms to the sauce. Then you can proceed with the rest of the recipe. I'm sure your grandmother will be so pleased.
