Ingredients
For the Cinnamon Waffles
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp granulated sugar
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cups milk
  • 1/4 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 tbsp ground cinnamon
For the Apple Topping
  • 3 apples (any variety works)
  • 2 1/2 tsp cinnamon
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 1/4 cup sugar
Instructions
Making the Apple Topping
Peel, core, and thinly slice the apples.
In a medium-sized saucepan, melt the unsalted butter over medium heat.
Add the sliced apples to the melted butter, stirring to coat them evenly.
Sprinkle the cinnamon, salt, and sugar over the apples. Stir well to combine.
Reduce the heat to low and let the apples simmer for about 10-15 minutes, or until they are tender and the sauce has thickened slightly. Stir occasionally.
Making the Cinnamon Waffles
Preheat your waffle iron. In a large mixing bowl, combine the flour, baking powder, salt, and granulated sugar. Mix well.
In a separate bowl, whisk together the eggs, milk, vegetable oil, vanilla extract, and ground cinnamon until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay.
Lightly grease the waffle iron with cooking spray or a small amount of vegetable oil to prevent sticking.
Pour an appropriate amount of waffle batter onto the preheated waffle iron (the amount will depend on the size of your waffle iron).
Close the waffle iron and cook until the waffles are golden brown and crispy.
Carefully remove the cooked waffles from the iron and keep them warm. After placing the waffles on a plate, spoon a generous amount of the prepared apple topping over the waffle.
