It’s pumpkin season so recipes call for all things pumpkin spice. This recipe can easily become your favorite fall brunch must have. It’s made with warm spices, yummy pumpkin and if you add protein like I did, it’s also a great protein breakfast. This is another simple recipe and it’s gluten free too because it’s made with buckwheat flour.


WHAT IS BUCKWHEAT?


Buckwheat actually comes from a plant, not a seed, it’s grain free. It’s also high in fiber, a great source of protein, it’s an anti inflammatory food and it’s also easier to digest. I love the nutty flavor of buckwheat. If you haven’t tried it, I highly recommend you give it a try.


If you don’t have buckwheat and you aren’t bother my gluten, then feel free to use another flour.


This recipe made about 5 servings but depending on how small or how large you make them, it can make more or less than 5.


I really encourage you to try making them with buckwheat flour, it tastes wonderful!

Ingredients
For the waffles
  • ▫️3/4 cup unsweetened pumpkin puree
  • ▫️1 cup unsweetened coconut milk
  • ▫️2 eggs
  • ▫️3 tbsp maple syrup (I used @lakanto)
  • ▫️1.5 tsp vanilla
  • ▫️1 tbsp melted coconut oil 
  • ▫️1 cup buckwheat flour
  • ▫️2 tsp pumpkin spice  
  • ▫️2 tsp baking powder
  • ▫️1/2 tsp baking soda
  • ▫️Pinch Himalayan sea salt
  • ▫️2 scoops Ancient Nutrition collagen protein (opt)
Instructions
For the waffles
Pre-heat waffle iron. 
In a bowl combine all wet ingredients until well incorporated. 
Add all dry ingredients to wet ingredients & thoroughly combine.
Spray pre-heated waffle iron with non stick spray & pour batter onto waffle iron. Cook according to your waffle iron manufacturer instructions. 
Remove from waffle iron, serve warm and add your fav toppings. I drizzled mine with homemade date caramel sauce & finely chopped pecans.
