Blinchiki (Russian Crepes/flat Pancakes)

A lot of people have heard of crepes but Russians have their own version that I find less sweat and more rich. It has been my favorite food since childhood and now my own daughter is a fan of the flat pancakes (although she eats it with syrup which is not very Russian lol).

You will need 1 cup of milk and flour, 1 egg, a table spoon of sugar, a sprinkle of salt and a table spoon of oil.

Mix equal part of flour and milk then all all the ingredient in a bowl and whisk together.

You may want the batter to rest for 5 minutes or so before you give it a final whisk to make sure there are no clumps.

The pour a ladle full into a warmed and greased pan.

This is the tricky part that does take some skill, you want to pour the batter on the side of the pan, then immediately raise it and turn so that the batter coats the bottom in a thin circle.

Cook for a few minutes until all the air bubbles pop, then flip.

That's all there is to it!

Like French crepes, you cam fill this with virtually anything. Probably the typical filler would be sour cream or red caviar. Another popular one would be meat patty. My all time fav is sour cream and fruit!

My husband likes it more like an breakfast burrito!

Ingredients

  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • 1 tbsp. oil
  • 1 tbsp. sugar
  • sprinkle salt
Instructions

whisk ingredients in a bowl to create the batter
pour in corner of greased and warm pan then pick up the pan on its side to over the bottom of the pan with the batter
wait for air bubbles to pop before flipping
