Is anyone else missing BBQ season? Because I am so ready for summer recipes! Unfortunately the weather does not seem to be on the same page.. This high protein - low carb dinner is so delicious and gives me all the summery feel with the grilled corn salsa. I would definitely recommend doing this with flank or skirt steak, however I had sirloin to use up.
I paired this with a creamy avocado spread which is to die for. It could be used in so many different meals - I'm thinking taco spread next time for sure!

Steak With Corn Salsa

Ingredients
For the Steak & Salsa
- 2 pieces of steak
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/8 tsp garlic powder
- 1 can of corn (or corn cobs)
- 1 avocado
- 1/2 red onion
- 1 lime
- 1 jalapeno (optional)
- salt to taste
For the Avocado Crema
- 1 avocado
- 1 cup Greek yogurt (or Mexican crema)
- 1 lime, juiced
- handful of fresh cilantro
- salt & pepper to taste
Instructions
For the Steak & Salsa
- Grill corn on a pan until charred
- Season steaks with chili powder, paprika, cumin, and garlic powder
- Pan sear or BBQ until preferred cook then let rest
- Combine diced onions, jalapeno, avocado, and the charred corn with lime juice and a bit of salt
- Slice the steak and top with the salsa, serve with crema if desired
For the Avocado Crema
- Combine all ingredients in a food processor or blender
- Adjust according to taste
