Steak With Corn Salsa

Is anyone else missing BBQ season? Because I am so ready for summer recipes! Unfortunately the weather does not seem to be on the same page.. This high protein - low carb dinner is so delicious and gives me all the summery feel with the grilled corn salsa. I would definitely recommend doing this with flank or skirt steak, however I had sirloin to use up.


I paired this with a creamy avocado spread which is to die for. It could be used in so many different meals - I'm thinking taco spread next time for sure!

Ingredients
For the Steak & Salsa
  • 2 pieces of steak
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/8 tsp garlic powder
  • 1 can of corn (or corn cobs)
  • 1 avocado
  • 1/2 red onion
  • 1 lime
  • 1 jalapeno (optional)
  • salt to taste
For the Avocado Crema
  • 1 avocado
  • 1 cup Greek yogurt (or Mexican crema)
  • 1 lime, juiced
  • handful of fresh cilantro
  • salt & pepper to taste
Instructions
For the Steak & Salsa
Grill corn on a pan until charred
Season steaks with chili powder, paprika, cumin, and garlic powder
Pan sear or BBQ until preferred cook then let rest
Combine diced onions, jalapeno, avocado, and the charred corn with lime juice and a bit of salt
Slice the steak and top with the salsa, serve with crema if desired
For the Avocado Crema
Combine all ingredients in a food processor or blender
Adjust according to taste
