One of my favorite meals to make is when you just have to throw everything together and bake it! These street corn salsa burrito bowls are basically one of those recipes. It requires just a little bit of prep to make the rice and the chicken, but other than that it takes almost no time at all. I make it even easier on myself by using rotisserie chicken. For being as simple as it is, the flavors combine so well together that it seems like it would be a lot more work. It’s one of our new favorite meals. You have to try it!

Ingredients

  • 3 cups cooked rice 
  • 2 1/2 cups cooked chicken, shredded or diced
  • 1 (15 oz) can black beans, drained and rinsed 
  • 1/2 cup street corn salsa 
  • 1/3 cup corn
  • 1/3 cup shredded cheddar cheese 
Instructions

Preheat oven to 350°. 
In a baking dish, combined rice, chicken, beans, salsa, and corn. 
Top with cheese. 
Bake for 10 minutes or until everything is heated through and the cheese is melted.
Serve in bowls and top with additional street corn salsa if desired.
