This one cooks up quickly and is very flavorful. Because the kielbasa is already cooked and needs to be heated through, it will take only ½ hour. Follow along and make your dairy-free kielbasa cabbage carrot dinner recipe.

This image shows the ingredients I used for this recipe. I used a food processor to shred the cabbage and carrots.

To make the Dijon sauce, Mix Dijon with equal parts of water to loosen. Add more if you want more dijon sauce.

To make this Kielbasa Cabbage Carrots recipe, shred the cabbage and carrots and set them aside. Cut up the bacon into small ½ inch slices. Then, in a hot skillet, add the cut-up bacon for 3 minutes on medium heat.

Chop up the onions and add them to the skillet till it is translucent. It will take about three minutes.

Add shredded cabbage and carrots to the skillet. Cook to reduce for about 5 minutes. Stir often.

Add about 1 tablespoon of water to the skillet, so it doesn't burn. Cut up the kielbasa into 1-inch wide pieces, then add them to the skillet.

Cook for 5 minutes until the cabbage and carrot are reduced. Add Dijon and water mixture. Stir well. Cover with the lid and cook for a few more minutes. Transfer to a plate and enjoy.

Here is what this dish looked like plated. Shredded cabbage allows me to cook this up fast with little effort.

If you prefer a more spicy dish, add more dijon mustard mixed with water.
