I don’t know why but every day it feels like a surprise that my kids need to eat dinner! I know it’s going to happen, but on most days I can’t get my act together to actually plan for it, and of course it’s on those days that I am almost out of ingredients and regret not food shopping before I run out of options.


So I was super happy when my friend sent me this easy 2 ingredient roasted pork chops recipe (ok it’s technically 3 but salt and pepper doesn’t count, does it?). I knew I had to share it with y'all lazy moms like me.


You won’t believe how succulent and flavorful roasted pork chops come out, it will make your family want to squeal with delight. They're tender, they're juicy, and they're so easy to make I’m definitely adding this to my things my kids will eat for dinner” list.

Ingredients

  • 4 boneless center-cut pork chops
  • salt and ground black pepper to taste
  • 2 tablespoons dried thyme, lightly crushed, or more to taste
Instructions

Preheat Your Oven: Let's kick things off by preheating your oven to 375°F (190°C). 
Pork Chop Prep: Sprinkle pork chops on all sides with thyme, salt, and pepper. Place on a baking sheet.
Bake in the preheated oven about about 20 minutes. If you’re super fancy and own a meat thermometer,  insert it into the thickest part of a pork chop and it will be ready once it reads 165 degrees F (74 degrees C)
Cover the pork chops with aluminum foil (form a tent-like cover) and let rest 5 to 10 minutes before serving.
