Cook the chicken breast. You can do this however is easier for you.


Shred the chicken using meat claws if you have them or just use two forks.


Top with your favorite Buffalo sauce.

Add the pork rinds to the bottom of a tray.

Top with the chicken mixture, bleu cheese crumbles, and green onions.


Bake, uncovered, for 30 minutes at 350 F.


Serve immediately. If the pork rinds sit out too long, they'll get gummy and kind of inedible. So you don't want to make this ahead of time. You want to pull it out of the oven when your guests are ready to eat.
