Pork Sausage Meatballs Yams Cauliflower Recipe

One-pan recipes are super easy to make for any weeknight meal. This week's dinner recipe is made with pork sausage, yams, cauliflower, and yellow squash among other veggies. A great fall dish for those leftover garden veggies. This Pork Sausage Meatballs Yams Cauliflower recipe has yellow squash in it but it doesn't need to be added if you don't like the texture. I used it because I had it.


I also had two pork sausage patties that I did not want to make burgers with it. So, instead, I made meatballs by using a tablespoon and rolling the tablespoon of meat rolled into a ball. The pork sausage patties have flavors in the sausage meat so I didn't need to add any flavoring to it. Yay!

HOW TO MAKE PORK SAUSAGE MEATBALLS?

Super easy to make these pork sausage patties. Open the two sausage patties from its packaging. Using a tablespoon, scoop out 1 tablespoon and roll into a ball.

You should end up making 12 1-inch sausage meatballs.

Preheat oven the to 425 degrees.


Then, cut the veggies:


Cut the red pepper into 2-inch strips. Set aside. Peel two yams and cut into 1-inch cubes. Set aside. Cut half of a red onion into quarters. They should be about 2-3 inches long. Set aside. Cut yellow squash into quarter strips than cut into 2 inch or 3-inch pieces. If you don’t care for yellow squash, you can omit this step. Add the red pepper, yams, red onion, cauliflower, and yellow squash, in a large bowl.


Then, add olive oil, granulated garlic, Italian seasoning, salt, pepper to the bowl, and mix well. If it seems a little dry, add more olive oil.


Toss the dressed veggies in two parchment covered cookie sheets. Arrange the pork sausage meatballs throughout the baking sheets.

Place the two baking sheets in the oven. Bake for 15 minutes and turn the veggies over. Bake for another 15 - 20 minutes or until pork sausage is cooked and the veggies are brown. Drizzle with extra olive oil before eating.

  • 1 head of cauliflower - cut into 1-inch florets
  • 2 pork sausage patties - using 1 tbsp scoop out and roll into a ball.
  • 1 red pepper - cut into strips 2 inches long
  • 2 yams - peeled and cut into 1-inch cubes
  • 2 yellow squash (optional) - cut into quarters than 2 inches or 3 inches long
  • .5 large red onion - cut into quarters about 2 - 3 inch long
  • 6 Tbsp of Olive Oil
  • 1 tsp granulated garlic
  • 2 Tbsp Italian Seasoning
  • Salt and Pepper to taste
  • Extra Olive Oil to taste (after cooking)
Instructions
