This easy un-stuffed pepper skillet is a simple, healthy recipe that gives you all the delicious flavors of stuffed peppers, in a fraction of the time! This meal uses pantry staples and takes 30 minutes to get on the table which is perfect for a busy weeknight. There is no rice in this recipe, but there are tons of sneaky veggies like peppers, onions and zucchini. By grating the zucchini, it almost disappears in the sauce and adds nutrition and moisture. You can of course serve this meal over rice, or with a nice big salad. If you’re feeling especially motivated, you can make my 20-Minute Marinara!

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 large pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • 1 1/2 tsp sea salt
  • 1 lb ground beef
  • 1 zucchini, finely grated
  • 3/4 cup marinara sauce
  • 1 cup shredded cheddar cheese
Instructions

Preheat the oven to 350 degrees (only if you plan to use cheese.)
Heat 1 tbsp olive oil in an oven-safe 12-inch skillet over medium-high heat. Once hot, add in the diced onions, and diced bell peppers. Sauté for 2-3 minutes. Add in minced garlic and stir for 30 seconds. Stir in the tomato paste and stir to coat the veggies.
Move veggies to the outside of the pan and add the ground beef. Let cook without stirring, until golden brown on bottom, about 1-2 minutes add the salt and seasonings and then break up into chunks. Continue to cook and crumble the ground beef until browned, incorporating veggies as you cook through the ground beef, about 5 more minutes.
Add the grated zucchini and marinara sauce. Stir to incorporate and stir to heat through.
Optional: Sprinkle with cheddar cheese and immediately transfer the skillet to the oven. Bake for 4-5 minutes or until cheese is melted.
