Pickled Red Onions

I have been researching how to make some pickled veggies. We have a barbeque coming up and it is going to include a burger bar. I eventually want to try this recipe with all kinds of veggies. Red onions is what I started with. They are so pretty after they have sat in the pickling juice. They get kind of soft and turn a beautiful pinkish red. They make my hubby's burgers look even better. I let mine soak in the juices overnight, we like a little tang to our vegetables. This mixture gave it some of that not a lot but just the right amount. Let me know if you try these and like them.
First slice up your red onion. You can use a mandolin or a sharp knife to get nice thin rings.
I used a mixture of Red Wine Vinegar and Cider Vinegar.
I used a large measuring cup to mix up the pickling mixture.
I put it all in a sealable container and let it sit in the refrigerator overnight.
They are crispy and just delicious.
And looking pretty too!

Ingredients
For the onions
- 1 large Red Onion
- 2 C boiling water
- 1/4 C apple cider vinegar
- 1/8 C red wine vinegar
- 1/4 t salt
- 1/8 t pepper
- 1 1/2 T honey
Instructions
To prepare the onions
- Peel and slice your onion real thin.
- Soak them in the boiling water for a few minutes.
- While they are soaking prepare the marinade.
- Combine all of the marinade ingredients to a bowl and stir well.
- Drain the onions.
- Add to the marinade mixture.
- Refrigerate for at least one hour.
- Enjoy!
Tips
- I let mine sit overnight and really liked the flavor. I believe it intensifies it.
