Brisket Sandwiches W Pickled Red Onions, Avocado, & Garlic Herb Mayo

Let's talk about brisket for a moment. If you like red meat, you really cannot go wrong with a nice piece of brisket. I don't know if you are like me, but it seems so hard to find decent brisket that is cooked well in restaurants. Why is it so often like shoe leather? Brisket at it's best should tear away without the use of a knife. Think about how moist and wonderful that sounds! My favorite place to get brisket is Terry Black's in TX. It's obviously not close to everyone, but they do sell their brisket frozen online where you can order (which I have done because I also don't live in TX). I promise it's not advertising, I'm just a super-fan.
Wherever you can get your brisket, get it ready for this meal. Now, I won't walk you through the process of cooking brisket because I have never done it (a post for another time). I had this ready-to-go. I think for a quick meal, you can do the same. Head to your favorite BBQ joint, and get some slabs of brisket to-go and try this out.
The brisket really shines with these complimentary flavors that punch up the fatty goodness and contrast with the pickled onions, too. I hope you enjoy!

Brisket Sandwiches W Pickled Red Onions, Avocado, & Garlic Herb Mayo

Ingredients
Brisket Sandwiches
- 4 servings of brisket (from your favorite BBQ joint)
- 8 slices of sourdough bread (can get this presliced at grocery store)
- 2 small avocados, sliced
- 1 red onion, pickled
- 1/2 C apple cider vinegar
- 1 Tbsp sugar
- 1/2 c mayo
- 1/2 c plain greek yogurt
- 2 garlic cloves, finely diced
- fresh herbs (I used thyme, basil, parsley), dice all finely
Instructions
Pickled Red Onion
- You can do this the night before if you want them really strong!
- Dice 1 red onion thinly
- Boil 1 C water and 1/2 C apple cider vinegar and sugar to boil. Turn off and pour over jar full of sliced red onions.
- You can eat as soon as 20 minutes, over they keep in the fridge!
Herbed Mayo
- Mix mayo, greek yogurt, and diced herbs and diced garlic and stir.
Brisket Sandwiches
- Toast your sourdough bread slices
- Add the herbed mayo
- Add avocado and pickled red onions to taste
- Place brisket on top and enjoy open face or as a sandwich.
- Enjoy!
Tips
- I recommend making this a quick meal by picking up pre-made brisket from your grocery store or favorite BBQ spot
- The greek yogurt makes the mayo sauce a little bit healthier, but feel free to just use all mayo or all greek yogurt if you would like!
