These delightfully pink onions add a zesty piquant flavour and a beautiful vibrant colour to countless dishes. Simple and basic ... sliced red onions covered in a mixture of water, vinegar, salt and sugar, and then allowed to marinate. Quick, easy and no fuss. It literally takes 10 minutes to assemble.


You can serve them an hour later if you like, but leave it covered overnight for best results. I used them as a deliciously crunchy topping on our burgers over the weekend. What a difference ... both visually and on the palate! These pickled onions will keep fresh for up to two weeks refrigerated.


Serve with any dish of your choice; works really well with cold meats or green salads; as a topping on tacos or sandwiches; as a side with stews or bredies.

Ingredients

  • 1 medium red onion, thinly sliced into half moons
  • 250ml (1 cup) water
  • 125ml (½ cup) grape vinegar
  • 30ml (2 tablespoons) sugar
  • Pinch of salt
Instructions

Mix all the ingredients in a small glass bowl.
Place the mixture in a sealed glass jar.
Store in the refrigerator for at least 1 hour.
