Kale Pesto
Even if you don't like kale, or if you don't like pesto, there's still a very good chance that you will like this kale pesto.
This pesto doesn't taste like a traditional basil pesto, which can taste really bitter because of how basil tastes. Since this doesn't have basil, it doesn't taste bitter.
And kale can also taste really gritty and earthy, if you don't clean or cook it right. But, because of the other ingredients in this, the kale doesn't taste that way.
So try this, even if you're not usually a kale or a pesto fan. You'll be surprised.

Measure and rough chop your kale, garlic, and walnuts. You're going to blend these, so you don't need to worry about cutting them up too much. Just a little.
Add the kale, garlic, lemon juice, and walnuts into a blender.
Blend it until the ingredients are smooth.
Add the olive oil. Stir until combined.
You don't want to blend the olive oil at all. This will make your pesto taste really bad (side note: you never want to blend olive oil because of a taste it releases).
Add the parmesan cheese.
Stir until the cheese is completely combined into the pesto.

- 2 cups kale, packed
- 1 clove garlic, sliced
- 1/3 cup walnuts, chopped
- 2 tablespoons lemon juice
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1/8 teaspoon pepper
- 1/2 teaspoon salt
Instructions
- Wash the kale and remove the leaves from the stem. Chop it into slightly smaller pieces.
- Add the kale, garlic, walnuts, and lemon juice in a blender. Blend until smooth.
- Pour in the olive oil and stir.
- Pour in the parmesan cheese, pepper, and salt, then stir until combined.
