Kale & Pistachio Pesto for a Spooky Platter

You may want to ask me: “did the spooky idea come first or the pesto?” Well, believe it or not, I had the Halloween idea already in my head which was making a Frankenstein bread with pesto. However while I was thinking about this, I knew that regular pesto would be too dark, so I had to come up with the perfect combo. Pistachio and kale seemed ok but I could never imagine the colour was so spot on. What do you think?

And if you are after a healthier and more savoury kind of Halloween food idea, the I highly recommend to make these Frankenstein faces as they will get a massive smile on the kids faces!

Kale & Pistachio Pesto for a Spooky Platter

  • 30gr/1oz kale
  • 30gr/1oz pistachios (no shell)
  • 30gr/1oz extra virgin olive oil
  • 30ml/1fl.oz water
  • 20gr/0.7oz Parmesan cheese
  • 1/2 lemon juice
  • pinch of salt
Put all the ingredients at high speed in a food processor and you are done!
For the Frankenstein face, I’ve used focaccia bread sliced and cut rectangular. Bread or French toast work too as long as you have a rectangular shape.
Spread your pesto on it, then use black olives to create the eyes, the hair and the scar on the face. Some tomato skin worked perfectly for the mouth.
