Egg Cups With Turkey

Batch cooking is so helpful when you're trying to plan for the week. You get a chance to make a bunch of (in this case) breakfast at a time. Then, you get to eat it during the week without needing to cook it. These egg cups are perfect for that style.


They're basically a Greek omelet, beaten together, and then poured into a cup make from turkey slices. You bake them and out comes a tasty breakfast.


This recipe makes a dozen egg cups, so if you make them on Sunday afternoon, you have enough to get you and one other person through the week (assuming you each heat up one every morning for breakfast).

Put a slice on turkey in each of the twelve cavities in a standard size muffin pan. If you don't like turkey, you can use ham for this instead.


Mix the eggs, feta cheese, spinach, salt, and onion powder together in a bowl. Make sure the ingredients are all combined.


Pour the egg mixture into the turkey slices.


If you want to assure that you are evenly distributing the ingredients, you can do this one at a time, but that's up to you.

Bake at 400 F until the eggs are completely cooked through. This should take about 20 minutes but will vary based on how well your oven holds the temperature steady.
