Goooooooood Morning Tricksters!!!


By the way, that’s what I’m calling you all now. Tricksters. Vicsters’ Tricksters.


Anyway…


For this recipe, I thought I’d walk you through a morning in the life of Vic…


It takes me about an hour to get to work and I typically get hungry about 1/3 of the way through…so, you could say I need a pretty mobile breakfast.


In my quest to 1) save money and 2) save time, I created the Breakfast Scramble!


Now, I’ll walk you through how to make them and some ideas for flavor combos, but the best part about these is that you can put in anything you damn well please.


The example I’ll walk you through here is the Italian Breakfast Scramble, but that’s just because I’d made sauce & meatballs (see recipe here) that day.


The different variations do have some nuances and luckily, we get those right out of the way from the beginning:


  • If using a precooked meat (meatballs, chicken sausage, pulled pork), then you can do what I’m showing you below.
  • If using a raw meat (chicken, ground turkey, ground beef) you’ll want to COOK THE MEAT FIRST. Then follow my directions below.


OK let’s get started…


First, dice up peppers and an onion and cook them until soft.


VIC TRICK: ….ok not really. But, peppers and onions are the freakin best and most versatile veggie combo there is. Good and good FOR you. That is all.

Then, add in (precooked) meat – in this case, I’m using the meatballs and sausage from the sauce I made.

I then added some kale and one of those microwavable rice packets…


VIC TRICK: I think I’ve talked about this before, but instant brown rice in the microwave is the best thing ever. So quick and an easy way to add sustenance to a meal.

Next, make a hole in the middle (you don’t have to, but it looks cool) and add your eggs.

Don’t get discouraged, this part isn’t the most appetizing. But, if you keep scrambling with a spatula, eventually you’ll get a nice, tasty egg scramble!

You see how you can add quite literally anything to these and they’d be tasty. Some other variations are:


  • Ground turkey, peppers, onions, taco seasoning
  • Egg white, red pepper, feta
  • Chicken, broccoli, hot sauce

Ingredients

  • ~1 lb chicken, ground turkey, beef (optional)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 cup kale
  • 1 package instant rice
  • 10 eggs, scrambled
Instructions

Please note:
If using a precooked meat (meatballs, chicken sausage, pulled pork), then you can do what I’m showing you below.
If using a raw meat (chicken, ground turkey, ground beef) you’ll want to COOK THE MEAT FIRST. Then follow my directions below.
Dice the peppers and onions and cook until soft.
Add (precooked) meat (see above)
Add kale and let it wilt a bit before adding the rice packet.
Add the eggs and scramble until all egg is cooked.
Transfer to tupperwares and take on the go!
