There is nothing better than a recipe that comes together in a snap with few ingredients and awesome flavor! Can I get an AMEN!?!


Something that can be used as a topping, a dip or a snack.... this summer, as we enter August and peak tomato season, make sure you pick up a pint of sweet grape tomatoes at your local farmers market and make this fresh and delicious Pico de Gallo.


Grape tomatoes, white onion, fresh lime juice, salt and pepper and some chopped fresh cilantro to finish it off. It doesn't get any easier than this. You can whip this up as a quick snack for company or use as a topping for your next taco night. It is especially delicious with fish tacos. Anyway you use it, you can't go wrong!

Ingredients

  • 1 pint grape tomatoes, finely diced
  • 1 small white onion, finely diced 
  • 2 tbsp fresh lime juice
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper
  • 1 tsp fresh cilantro, chopped
Instructions

In a medium bowl, squeeze the fresh lime juice to the bottom of the bowl. Add in the diced grape tomatoes, onion, salt and pepper and toss to combine well. Lastly, add in the cilantro and toss.
Refrigerate for at least 1/2 hour are up to 4 hours. Serve with your favorite tortilla chips or as a topping for your favorite Mexican night dish.

    You left out the JALAPENO PEPPER for a TRUE Pico De Gallo recipe!

  • Great recipe for those that can't take the heat. Have a couple in my circle that can't take cilantro, so I sub in parsley or basil or thyme. Turns it more into an Italian version of pico, yet that doesn't matter. My crew loves garlic, I toss a bunch of that in as well. Thanks for sharing! Shows the versatility of some simple ingredients to make everything better!
