Strawberry-Honey Agua Fresca

While thumbing through a magazine the other day, I found a little note about Agua Fresca and how you could blend watermelon, cucumber, or cantaloupe with lime juice and a little sugar, then strain and serve over ice. That reminded me of an Agua Fresca recipe I made a few years back. It’s made a little differently–—I used strawberries and didn’t strain it. I also used honey instead of sugar.

This Strawberry-Honey Agua Fresca is so refreshing! If you’re not familiar with Agua Fresca, it’s Spanish for “fresh water” and is a type of fruit drink that is served all over Mexico. Made from a combination of fruits, sugar, and water blended together, it’s a yummy beverage for spring and summer!

Ingredients

  • 2 cups water, at room temperature
  • 1/3 cup honey
  • 3 cups strawberries, hulled and cut in half
  • 1/8 cup fresh lime juice (or juice from 1 lime), or to taste
  • Additional lime slices for garnish (optional)
Instructions

Blend water and honey in a medium bowl or other container, stirring until honey dissolves.
Place strawberries in blender and process until smooth.
Add honey-water mixture and lime juice to blender and process all ingredients together until well-blended.
Pour into glasses right from the blender or put in a pitcher (you can add ice if you like) and serve.

    Love agua Fresca! I will have to try this recipe. Honey instead of sugar sounds so refreshing I also use the strawberries in my lemonade. I never strain seeds but I’m sure others might. I also use the juice from the watermelon in my tea or lemonade or plain water.
