This is a great recipe to use up your leftover vegetables that are going bad in your fridge or even use up your frozen vegetables. I made this recipe for my whole family and they couldn't tell that there were 5 servings of vegetables in this! Remember this is the recipe I used for the vegetables I found in my fridge. You can mix and match and make it more your own. I have tried this recipe a couple different ways with different vegetables and to me, it tastes the same. This is a great suggestion for people that don't like the taste of vegetables to get it in their diet.
1 tbsp of nutritional yeast is 200% of your daily B12.

Ingredients
Vegetable Pasta Sauce
- 1 cup frozen spinach
- 1/2 cup broccoli
- 1/2 cup cauliflower
- 1/4 cup chopped carrots
- 1/2 cup vegetable broth
- 3 tbsp olive oil
- 1 tsp lemon juice
- 1 tbsp nutritional yeast
- 1 tbsp salt
- 1 tbsp garlic
- 1 tsp onion powder
- 1 tsp red pepper flakes
- 1 cup soaked cashews
- 1/2 cup chopped basil
Instructions
Vegetable Pasta Sauce
- On the stovetop, in a medium pot over medium heat, saute all vegetables in 1 tbsp olive oil
- Once vegetables are softened, after about 5 minutes, add vegetables to food processor
- In food processor, add vegetables, broth, olive oil, lemon juice, and blend on puree
- In food processor, add seasonings, cashews, and basil. Add salt to taste. Blend on puree
- If not pureed, blend further and add more vegetable broth
Tips
- Feel free to change the vegetables to whatever you have on hand. This is based on what was in my fridge
