Summer Fruit Salad Parfait
Summer is all about quick and easy recipes that the whole family will enjoy. The fruit reaches its peak of sweetness and ripeness so these are the perfect ingredient for a fruit salad parfait. With this recipe you may enjoy the fruit salad on its own to add layers of greek honey yogurt for the perfect refreshing treat. My favorite summer fruits are peaches ,berries and kiwi.
For this fruit salad recipe I used these:
- ripe peaches
- blackberries
- raspberries
- kiwi
- fresh orange juice
- fresh mint
I whipped some greek yogurt with honey and chia to make the parfait.
A delicious combination of fruit with orange juice and brightening this bowl with fresh mint.
A tasty yogurt parfait: creamy layers of honey yogurt, tangy fruit and crunchy chia seeds.
Make ahead and keep refrigerated until serving. A perfect treat!
First add a layer of honey yogurt.
Then top off with the fruit salad and chia seeds.
Another layer of fruit and repeat two more times.

Summer Fruit Salad Parfait
Recipe details
Ingredients
- 1/2 cup of raspberries
- 1/2 cup of blackberries
- 1/2 cup of chopped kiwi
- 2 ripe peaches
- 1/2 cup of orange juice
- 10 mint leaves
- 2 cups of greek yogurt
- 1 tbsp of honey
- 2-3 tbsp of chia seeds
Instructions
- Rinse the berries and set aside to dry.
- Cut the peaches into little cubes
- Peel and cut the 2 kiwis into cubes
- In a medium size bowl, mix in all the fruit and the 1/2 a cup of fresh orange juice
- add a few leaves roughly chopped of mint
- Combine all and set aside in the fridge
- In a bowl whisk the yogurt and honey
- Using martini glasses start layering, the honey yogurt, then add the fruit, then chia seeds. repeat this step until cup is filled.
- Garnish with fresh mint leaves
- Enjoy!
Tips
- You may use store bough honey yogurt or any kind instead of greek yogurt.
- You may use your favorite plant base yogurt for the vegan lovers.
