Peanut Butter Energy Balls

Ingredients
- 1 ½ cup quick oats
- 2 tbsp flax seeds
- ½ cup creamy peanut butter
- ¼ cup honey
- 1 tsp vanilla extract
- ½ cup chocolate chips
Instructions
- Add oats to a large bowl.
- Add the rest of the ingredients on top of the oats.
- Stir ingredients well with a large spoon.
- Refrigerate mixture for about an hour to make it easier to form your balls.
- Line a baking sheet or tray with parchment paper.
- Using a cookie scoop or spoon, gather some mixture and form into one inch balls.
- Set balls on the parchment lined cookie sheet, and freeze for 2 hours.
- Place energy bites into a freezer bag and store in the refrigerator for up to a week, or in the freezer for 3+ months.
