It's almost summer and there is always a reason to celebrate and get together with friends and family. And every occasion involves food, and that's the part I look forward to.

There is always dessert on the table, and that dessert should be summery, light, satisfying, and guilt-free so that it doesn't matter how much you want to eat. From that perspective, I like to create dessert recipes that involve minimum sugar, and as much as possible use natural sweeteners (such as fruits, dates, etc.).

I love dates, and I see a lot of potential and room for creativity with date-based desserts. I've mostly used them to make energy balls / squares but this time I wanted to venture into baking a cake. And of course, crunchiness is a great texture to add in to (my) sweets, so walnuts was the option I went for.


So here's the Date-Walnut Cake recipe.

Ingredients
For the mix
  • -2 cups pitted dates or date paste
  • -1 cup holt milk
  • -3/4 cup room temperature milk
  • -3/4 cup oil (vegetable or olive)
  • -2 cups flour
  • -3 tbsp baking powder
  • -Handful walnuts
Instructions

-Soak dates in hot milk for 30 min, then blend them together to get a smooth texture
-Add oil, room temperature milk and mix well to combine
-Add flour, baking powder and combine
-Add walnuts and fold the mix
-Grease some parchment paper and place in a pan / mold
-Pour the mix into the pan / mold (optional to garnish with extra walnuts)
-Bake for 30 min at 350
