There is nothing I like more than to be able to throw a quick lunch together that doesn't require anything but a mixing bowl to toss it together.


This quick chickpea salad is fresh and delicious. It comes together in less than 10 minutes and is full of my favorite Mediterranean flavors, like red onion, cucumber and tomatoes. Its like a greek salad without the romaine! Plus it makes two lunch portions, so one for today and one for another day this week. If you have chickpea lovers in your house, just double the recipe for a week of prepped lunches.

Ingredients

  • (1) 15oz can of chickpeas, drained and rinsed
  • 1 vine ripe tomato, seeded and chopped
  • 1/4 hothouse cucumber, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pitted kalamata olives, roughly chopped
  • 1 cup baby spinach, lightly packed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • pinch kosher salt
  • freshly ground black pepper, to taste
Instructions

Simply add all the above ingredients to a large mixing bowl, top with extra virgin olive oil, white wine vinegar and kosher salt and fresh ground black pepper to taste.
Toss well so that all the ingredients are lightly coated with the olive oil and vinegar and enjoy!
