Who is ready for crispy chicken spring roll tacos?


Here is my creative version of the traditional spring rolls. One Friday night I was thinking what to do for dinner, i wanted something fun and different. so I went into my fridge and found some leftover rotisserie chicken, cabbage, carrots, green onions and cilantro and rice paper. So I was thinking to air fried the rolls but then remember I have seen these recipe, where you fry the rice paper and turns into a taco shell. So let"\s make this delicious crispy asian taco.


I used the typical ingredients from the spring roll and turn into a crispy chicken salad taco. For dressing I used an avocado cilantro dressing and topped with slivered almonds for extra crunch. For garnish I used fresh cilantro and green onions for color and flavor. Don't forget some extra slivered almonds for extra crunch.

Ingredients

  • 4 rice paper wraps
  • 1 cup of shredded rotisserie chicken
  • 1/2 cup of shredded purple cabbage
  • 1/4 cup of shredded carrots
  • 1/2 cup of cooked mushrooms
  • 2 Tbsp of slivered almonds
  • 1 green onion finely chopped
  • 2-3 Tbsp of cilantro avocado sauce
  • 1/4 cup of avocado oil
  • Cilantro
  • extra slivered almonds for garnish
Instructions

In a hot pan add the avocado oil and when hot add each rice paper wrap separately and let it curl up with the help of spatula to create a taco shell.
Now, in a large bowl, combine the stuffing ingredients. Add the chicken, carrots, cabbage, mushrooms, almonds, green onions, cilantro. Mix well with 2-3 Tbsp of the cilantro avocado sauce.
Now stuff each shell with chicken salad, and garnish with fresh cilantro and extra slivered almond.
