  • 1 package wide rice noodles
  • 8-12 oz marinated beef, slices
  • 4 scallions
  • 2 in ginger
  • 1/4 cup vegetable oil
  • 1 tsp sesame oil
  • 2 tsp dark soy sauce
  • 2 tbsp regular soy sauce
  • 1/2 tsp sugar
  • (optional) 2 tsp shaoxing wine
  • salt and white pepper, to taste
  • 4 oz fresh mung bean sprouts

Sear your marinated steak slices only until both sides are brown.
At the same time, boil your noodles until almost soft and then drain & rinse with cold water to prevent from sticking.
Add the 1/4 cup vegetable oil to a large pan and toast the ginger & green onion for a few sec before adding the noodles.
Add all the sauces and mix well before adding the steak in.
Add the bean sprouts and stir fry just until softened.
Try the noodles and add salt + white pepper to taste.
