Spring is in the air and along comes all the vibrant delicious spring produce. One of my favorite recipes and the perfect side dish to any meal are these crunchy delicious lemon garlic prosciutto wrapped asparagus.


I first made them at one of my first family dinners I hosted as a newlywed for my in laws. Since then has become a family favorite side dish for Easter, Thanksgiving, and any other holiday in between.


I love how tasty and crispy, easy to assemble and cooks in no time. This is the recipe you want to make to impress your guest.


Here is what you need:


2 lbs of fresh asparagus

1/2 lb of thinly sliced prosciutto

4 garlic cloves

1 lemon

Salta + Pepper to taste

Extra Virgin olive oil

Ingredients

  • 2 lbs of fresh asparagus
  • 1/2 lb of thinly sliced prosciutto
  • 4 garlic cloves
  • 1 lemon (zest and 1 tsp of the juice )
  • Salt + Pepper to taste
  • Extra Virgin olive oil
  • Pecorino romano
Instructions

First pre- heat the oven to 400 degrees. Leave the baking sheet inside.
Then trim and cut the ends of the asparagus. Use half of each thinly sliced prosciutto to wrap about 3 or 4 asparagus.
Once the oven is preheated, get the hot baking sheet out and drizzle a little of extra virgin olive oil and lay out the asparagus bundles, season with salt + pepper and bake for 10 minutes. Then get the tray out, add the freshly chopped garlic and bake for another 5 minutes.
When ready, bring the baking sheet out of the oven and finish it with fresh lemon zest, a splash of lemon juice and freshly grated pecorino romano.
It is simple, delicious and colorful dish.

Tips
  • You may use thinly sliced bacon instead of the prosciutto.
