A quick and easy recipe for some pre-dinner or afternoon snacking, using one bag of mixed nuts and some store cupboard ingredients. I made this around the Christmas and New Year Period and they are great to having hanging around.


Bombay Nuts use a combination of cumin, coriander and turmeric and really pack a flavour punch. Serve them in a bowl while dinner is being prepared.


Honey-roasted nuts are completely and dangerously addictive, but also great to have lying around at the time of year. Pre-dinner, on the cheese board, packaged and given as presents...This recipe is great between it’s not too sweet, and the cayenne pepper gives a little tiny kick! Hope you enjoy!

I served the honey-roast nuts on my cheeseboard - it goes amazing!

Ingredients
Bombay Spiced Nuts
  • 150g mixed nuts
  • 20g butter
  • 1 tsp cumin
  • 1/2 ground corriander
  • 1/2 tsp tumeric
  • 1/2 tsp chilli powder
  • 1/2 tsp sugar
  • 1/2 salt
Honey-Roasted Spiced Nuts
  • 150g mixed nuts
  • 2 TSP Honey
  • 1 tsp cinnamon
  • 1/2 cayenne pepper
  • 1/2 salt
Instructions
Bombay Spiced Nuts
Melt the butter and then add all the spices, and mix together well
Pour the butter mixture over the nuts and use your hands to make sure all the nuts are coated
Spread the nuts across a lined baking tray, and roast for 15-20 minutes at 180 degrees until golden!
Leave to cool and then store in a sealed container
Honey-Roasted Spiced Nuts
Heat the honey so it gets less thick and then add all the spices, and mix together well
Pour the honey mixture over the nuts and use your hands to make sure all the nuts are coated
Spread the nuts across a lined baking tray, and roast for 15-20 minutes at 180 degrees until golden!
Leave to cool and then store in a sealed container
Tips
  • These keep for a couple of weeks in a sealed container. Pop them into sweet bags or jars and give them to friends and family as presents!

    These sound wonderful, but please tell me how many cups of nuts are in 150 grams and how many tablespoons of butter in 20 grams.

    I am looking for ways to sneak turmeric into our diet, so I am tempted to use a bit more.
