If you like kettle corn, then you'll love this salty and sweet popcorn snack. It's super simple to make. In fact, this is a recipe that my 3 year old has mastered. We've done it with different flavors of gelatins and various colors of sprinkles. I thought a patriotic version of this recipe would be perfect to share with you for this upcoming Independence Day. (Of course, you can make it any old way you please.) My toddler is super excited to bring a red, white and blue bowl over to her grandparents house for a 4th of July BBQ.

Ingredients

  • 1 bag of popped microwave popcorn
  • 2 cups of mini marshmallows
  • 2 Tbsps salted butter
  • 3 Tbsps red gelatin powder ( I prefer Jell-o Cherry Gelatin for a bold red color)
  • Red, white and blue sprinkles
Instructions

Pop the popcorn according to directions on the bag. Remove any unpopped kernels and pour into a large bowl.
In a medium sized pot, melt the butter over medium heat. Once the butter is melted, add in the marshmallows. Stir constantly until the the marshmallows have dissolved and there are no more bumps.
Turn off the heat and add in the gelatin powder. Stir until dissolved, then immediately pour over the popcorn in the bowl. Fold the melted marshmallow into the popcorn until evenly coating the kernels.
Sprinkle with patriotic sprinkles and serve.
