Homemade moose munch is a great treat to make for the holidays. You can make a batch to devour at home, to give away or both!


Although I’m not a huge fan of baking – I much more prefer cooking over baking, 1000% – I do like to make small sweets to give away during the holidays. Though there’s an unlikely chance you’ll find a single cookie on a holiday tray I create, simply because I don’t bake cookies well, what you will find are lots of candy-like treats, along with dessert bars and flavored popcorn. These types of desserts are my jam, and when I start thinking about holiday baking (or my definition there of), it’s these little delicacies that get me excited for holiday baking.

One of my very favorite snacks of all time, is popcorn. Sweet or savory, I like it all and I love to play around with flavors dress it up. Popcorn is a great canvas where the sky is the limit with the flavorings that can be added.

I got my affinity for popcorn from Mama. Every single day, without fail, she would pull out her popcorn popper, the one with a yellow dome lid with holes in the top to drizzle in melted butter, and pop a batch, adding her “rabbit food” on the side, just so she could justify making her lunch a little healthier. There were always a couple radishes, a small wedge of iceberg, some celery, and more often than not, she’d add a couple slices of Monterey Jack cheese. She would line her lap with a dish cloth, and then get comfy on the couch with the bowl of popcorn in hand, and watch her stories. As The World Turns, Guiding Light…..

Fortunately, now, there’s lots of microwave popcorn flavors on the market for our munching pleasure, but my favorite, hands down to buy, is just the tender white variety. Nothing fancy, and as I mentioned earlier, a blank canvas to add whatever flavorings the heart desires.

This holiday season, I set out to up the popcorn game and make a moose munch. Popcorn and peanuts with a caramel base, with a decadent chocolate drizzle over top.

Moose munch, by any definition, is really Cracker Jacks with a chocolate drizzle. Popcorn and peanuts with a swing of chocolate. Any sweet treat made with popcorn and peanuts, and I’m totally all in. You pretty much have me at “Hello.”

The recipe couldn’t be simpler. Pop a couple bags of popcorn, spread in an even layer on a baking sheet and sprinkle with cocktail peanuts. Make the caramel sauce, pour over top and stir to coat every piece of popcorn. Put the tray in the oven for an hour, stirring every few minutes, and once it’s done, drizzle melted chocolate over top, with a fork. Let it cool…


One batch makes a lot, which is perfect to not only give a few pieces away, but to save some for yourself to devour.

I highly recommend using a Silpat mat for this recipe! These mats keep things from sticking, and you’ll have them forever. Can be used in a menagerie of things, they’ll last a lifetime. You can find the mats HERE!

Ingredients

  • 2 bags white microwave popcorn
  • 1 1/2 cups cocktail peanuts
  • 1 cup brown sugar packed
  • 12 tbsp butter unsalted
  • 1/2 cup light corn syrup
  • 1 tsp baking soda
  • 1 cup dark chocolate chips
  • 1 tsp shortening
Instructions

Preheat oven to 250 degrees.
Place a silpat mat over each of the two baking sheets.
Pop the popcorn according to package directions. Spread a single layer of popcorn and peanuts over each baking sheet, dividing evenly. Set aside.
In a heavy bottom saucepan, combine brown sugar, butter, and corn syrup. Cook over medium heat for roughly 7 minutes, or until mixture comes to a boil.
Continue boiling for 2 minutes.
Remove pan from heat and stir in baking soda. Allow to cool slightly Don't let it get too cool or it will start getting hard!
Pour caramel mixture over popcorn and nuts and stir well so that the popcorn is coated.
Bake for 60 minutes, stirring every 15 minutes.
Remove from oven. Allow to cool completely.
Once cooled, melt chocolate chips with shortening in a double boiler. To do this, fill a sauce pan 1/3 of the way with water. Cover with a bowl and add chocolate and shortening. Stir continuously until melted.
Using a fork, generously drizzle chocolate over the popcorn and peanuts, and let stand 3-4 hours until chocolate is set. Break into pieces and enjoy. Store leftovers in an airtight container in a cool place.
