Spring onion noodles are the perfect store cupboard meal. I make these at least once a week for a quick lunch or a small snack. They can also make the most amazing foundation for a more extravagant meal - in the picture below I've topped the noodles with some amazing home made char siu Chinese pork (recipe also on my Food Talk page - search for 'char siu pork') and some homemade pan-fried and steamed dumplings.


The sauce is simple but effective- the oil is flavoured with the beautiful spring onion and carries all the flavour. Simply delicious!

Ingredients

  • 2 spring onions (scallions), finely chopped, whites and green separated
  • 2 tbsp flavourless oil
  • 2 nest of noodles (I like egg or wheat noodles)
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • Pinch of sugar
Instructions

Cook the noodles according to the packet instructions
Add the oil to a frying pan to warm. Add the diced whites of the spring onions and fry until softened but not browned. Remove the spring onion with a slotted spoon and keep on one side
Add the soy sauce and sugar to the oil until bubbling
Add the drained and cooked noodles and mix with the sauce
Add the cooked spring onion whites and the raw spring onion greens and stir up
