How To Make Cauliflower Gnocchi Taste Great!

When Trader Joe’s first came out with cauliflower gnocchi, I couldn’t for the life of me understand the hype. I tried making it multiple times, in various ways, and it continued to turn out super gummy and gross. But, after a lot of trial and error I finally found the perfect way to cook it. And now the cauliflower gnocchi is one of my favorites!

The secret is tossing it lightly with a little olive oil spray and air frying it…for a long time. And trust me, it’s worth the wait. The gnocchi gets crispy and crunchy on the outside, and nice and soft in the middle.


I usually enjoy it alongside three other Trader Joe’s ingredients for a simple, affordable, and absolutely delicious lunch or dinner.

Ingredients

  • 1 1/4 cup cauliflower gnocchi
  • 1/4 – 1/3 cup vegan kale, cashew, basil pesto
  • 1 link hot italian sausage
  • olive oil spray for cooking
  • freshly grated parmesan to taste
Instructions

Add frozen cauliflower gnocchi to a small bowl. Coat with a bit of olive oil spray, tossing with a spoon to ensure gnocchi is evenly coated. Then, add gnocchi to an air fryer basket and cook at 400° for about 23 minutes.
After about 10 minutes, remove basket from air fryer and shake to ensure pieces aren't sticking to the bottom. Repeat if necessary.
While gnocchi cooks, cut the end of the sausage link and squeeze ground sausage into a hot non stick skillet with a bit of oil. Cook sausage over medium heat until thoroughly browned and cooked through.
When the outside of the gnocchi is golden brown and crispy, add it to the pan with the cooked Italian sausage. Then, add pesto and toss with a spoon. Add more pesto as needed, ensuring gnocchi is well coated.
Add to plate and top with freshly grated parmesan cheese!
Tips
  • Recipe Notes
  • When it comes to air frying the gnocchi, be patient. I promise it will get nice and crispy. However, you may need to adjust the cook time depending on your air fryer. I use the Power XL.
  • Fresh parmesan makes ALL the difference. I can’t say enough good things about the flavor of the parmesan pictured in the recipe. I also recommend using a microplane grater/zester.
  • If you’re not a big fan of pesto, try it with red sauce. It’s still super tasty!
