This was a super light healthy dinner which I snapped together in only 15 minutes. It’s a great dish if your short for time, or want something filling yet light.


You could alter you vegetables to whatever you have in your fridge, however this combo worked perfectly! The green pesto worked so well to give a light sauce covering to the pasta.


This dish can be eaten hot straight away, or also cold as leftovers for lunch. I used gluten free pasta, as it suits my stomach better, but you can use any shape or type of pasta. I think the tubes of penne work so well for this dish as they soak up the pesto in the insides.

Ingredients

  • Pasta (I used GF)
  • 1 heaped tbsp green pesto
  • 1 courgette
  • 1 red onion
  • 2 sprigs of kale
  • Handful of peas
  • Salt and pepper
  • Some of your pasta water
  • Pine nuts
Instructions

finely chop your onion and garlic and cook them in a frying pan on a low heat until softened
Meanwhile cook your pasta to your ideal level of al dente. (check packet)
Drain pasta, keeping back some of the water.
Add your pesto and a little water to the empty pan.
Now toss through your pasta and veggies.
Allow to cook through for a couple minutes.
Toast your pine nuts and serve! 💚
