Ingredients

  • 10 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts, cut into chunks
  • 1 pint Bushel Boy cherry or grape tomatoes, halved
  • 1/3 cup flour
  • 1 t. salt
  • 1 t. pepper
  • 3 T olive oil
For the Cream Sauce
  • 1 ½ cups heavy whipping cream
  • 4 cloves garlic, minced
  • 3 T unsalted butter
  • 1 cup chicken stock
  • 1 t onion flakes
  • ¼ t cayenne pepper
  • ¼ cup fresh basil leaves, chopped
  • ½ cup freshly grated Parmesan cheese
  • 1 t salt
  • 1 t pepper
Instructions

Preheat a large rimmed skillet to medium heat and fill a stockpot with water and start to bring it to a boil.
Meanwhile prep and cut the chicken into pieces and slice the cherry tomatoes. Set both aside. In a small bowl combine the flour, salt and pepper. Add the oil to the heated skillet.
Lightly dredge the chicken into the flour mixture and add to the hot pan. Saute the chicken until golden brown, stirring frequently. Once just done remove from the pan and set aside.
Add the fettuccine noodles to the boiling water. Cook according to package instructions.
In the same skillet you cooked the chicken, add the butter and garlic and saute over medium heat, scraping up the bits in the bottom of the pan. Add in the tomatoes and continue to saute until soft.
Next add in the heavy cream, broth and seasonings. Simmer over medium heat, allowing it to bubble until it starts to thicken, around 10 minutes. Add in the fresh basil and Parmesan cheese, stirring to combine and melt.
Once the sauce is thickened, add the cooked chicken and fettuccine into the skillet, tossing to coat well. Simmer over low heat for a few minutes until the pasta absorbs the sauce. Let it sit for another 5 minutes before serving.
