Cheesy Meaty Macaroni

This is a yummy quick dish with lots of fresh ingredients. All goes into one dish to be baked in the oven.
Brown 500g of beef mince
While it’s browning boil a bag of macaroni.
Chop up a red pepper, onion & 3 garlic cloves.
Add the pepper, onion & garlic to a frying pan & Fry until softened.
Chop some vine plum tomatoes and fresh chillis and add to the mix.
Give it all a good mix
Add a cup of chicken stock
Add some spicy Italian seasoning
Add some crushed chillis
Add a tin of chopped tomatoes
Add 2 teaspoons of red pesto
Mix and let simmer for 5 minutes
Add the browned mince to the sauce and stir
Add some chilli oil
Drain the macaroni
Add the sauce to the macaroni but keep some back for putting over the top later
Give it a mix
Add some Red Leicester cheese and mix
Pour into a tray or dish
spread the remaining sauce mix over the top.
Cover with grated cheese & bake in oven on 180 until cheese has melted and golden
Serve with some salad covered in pomegranate molasses

Whole dish

- bag of macaroni
- onion chopped
- red pepper chopped
- 3 garlic cloves chopped
- vine plum tomatoes chopped
- fresh red chillis chopped
- cup chicken stock
- spicy Italian seasoning
- chilli flakes
- tin chopped tomatoes
- 2 tsp red pesto
- chilli oil
- Red Leicester cheese
Instructions
Whole dish
- Heat oven to 180
- brown the mince
- boil the bag of macaroni
- fry the onion, red pepper & garlic til softened
- add the chopped vine fresh tomatoes & fresh chilli and stir
- add a cup of chicken stock
- add the spicy Italian seasoning & chilli flakes to your taste
- add tin of chopped tomatoes
- add 2 tsp of red pesto and stir
- now add the mince into the sauce
- add some chilli oil
- drain the macaroni
- add the sauce tot the macaroni holding some back for later
- pour into a tray or dish and cover with remaining sauce
- grate some cheese over the top and bake in the oven for 15 minutes until golden.
- serve with salad with pomegranate molasses
