Pumpkin Spice Baked Oats

This is a fall version of my classic baked oats recipe (the recipe is found in an earlier post). I'm not a huge fan of pumpkin flavored things but I do like to indulge every now and then. This baked oats recipe I feel is very subtly pumpkin. I am not a fan of the over the top pumpkin flavored things. Feel free to experiment with the recipe and add chocolate chips, coconut, chia seeds, caramel, etc. Anything you feel would go well with this.


You can also sub out the pumpkin with applesauce or mashed bananas for a regular tasty baked oats recipe.

Ingredients
Pumpkin Spice Oat Bake
  • 3/4 can pumpkin (from a 14 oz can)
  • 2 cups rolled oats
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 3/4 cup milk (or milk substitute)
  • 1/2 tsp baking powder
  • 1 tbsp pumpkin spice seasoning
  • 1/4 cup chopped pecans (optional)
  • Whole pecans for topping
Instructions
Pumpkin Spice Oat Bake
Preheat oven to 350
In a medium mixing bowl, add all wet ingredients and mix well (milk, eggs, coconut oil, maple syrup)
Add in the remainder dry ingredients (pumpkin spice, oats, baking soda, and pecans)
(Optional) top with whole pecans
Pour mixture in a 9 inch baking pan
Bake in oven for 20-25 minutes
Tips
  • Must refrigerate after baked
  • Add mashed bananas or applesauce in place of pumpkin to make the normal version
  • Feel free to experiment and add chocolate chips, coconut, etc.
