You read that right…this is a recipe for baked shrimp scampi and it is outstanding!


My grandmother gave it to me before she passed and it is sooooooo much better than sautéing it over the hot stove!


My kids have always loved it, even when they were little, and you can even use the leftovers to make shrimp scampi flatbread pizza!

I make this Baked Shrimp Scampi recipe all the time because it is so easy, so good and a major crowd pleaser.


It’s quick to make, easy to clean up and easily modifiable.


Your guests are vegetarian?


No problem, substitute shrimp for tofu.


You prefer scallops to shrimp?


No problem, swap it out.


It is not a red meat-type recipe, but I bet you could even swap the shrimp out for chicken breast if you cut it up into shrimp size pieces.

Ingredients

  • 1 lb thawed shrimp, peeled, cleaned and deveined
  • 12 oz salted butter
  • 1/4 cup extra virgin olive oil (EVOO)
  • 2 garlic cloves, minced
  • 2 tbsp fresh chopped parsley
  • salt to taste
  • pepper to taste
Instructions

Pre-heat oven to 375 degrees.
Place shrimp, butter, EVOO, garlic and chopped parsley in roasting or casserole dish.
Bake for 25-30 minutes or until shrimp are fully cooked.
Mix the shrimp up halfway through cooking to make sure it fully cooks.
Tips
  • If you are low carbing, serve as is. Or you can serve over linguini or spaghetti (any pasta you have on hand can work too).
